How to cook sticky rice with mango
First of all, you need to boil the rice. You can do this simply by filling the saucepan with water and add rice once the water has been boiled. Add rice to the boiling water and cook on low heat for 10-15 minutes, until the water has been absorbed.
Meanwhile, you can mix the other ingredients which include one cup of sugar, salt as per taste and coconut milk. You have to mix them well in a saucepan and cook over medium heat until everything boiled well.
Once the rice and other mixture have been boiled well, mix these two in a saucepan and allow to cool down for up to 1 hour.
To make the sauce for Sticky rice with mango, you need to mix rest of the ingredients in a saucepan which includes tapioca starch, coconut milk, salt, and sugar. You need to boil this mixture too to get the consistency for the sauce.
Once you are done with the above steps, now arrange the dish by placing sticky rice in a bowl. Arrange the peeled mangos on the top of sticky rice and then pour the sauce over the mango. You can also serve sauce separately. For garnishing, sprinkle sesame seeds.
2. Khanom Krok Or Thai Coconut Pudding
Coconut is one of the popular and most used Arecaceae in Thailand; that’s why it has been used in most of their recipes. People of Thailand did not use coconut in their main course but also in thai desserts because it gives very creamy texture to your food.
Kanom Krok or coconut pudding is one of the traditional dessert of Thailand which has been cooked in a special Kanom Krok pan. This dessert has been cooked into two layers; the cake and topping. It does not take you to cook this pudding more than 15 minutes if your rice flour mixture is ready. This coconut pudding is served warm, so you have no need to wait for hours to cool down the dessert.
Khanom Krok Cake Ingredients:
- One cup of rice flour
- Water up to 2 cups for mixing
- Steamed jasmine rice 1/3 cup
- Half cup of grated coconut (dry)
- Salt as per taste of half teaspoon
Khanom Krok Topping Ingredients:
- 1 cup of coconut cream
- Sugar half cup
- Salt as per taste or 1 teaspoon
- Optional: 1 green onion chopped
Recipe for Khanom Krok cakes:
In a cup of water mix one cup of rice flour. You can also make rice flour at home by grinding the rice in a blender, but it is highly recommended to use rice flour because it has other ingredients too which will give your mixture a smooth texture for the cake. Mix both of them and give at least one hour to sit. It is great if you leave it overnight.
In a blender, mix the rest of ingredients of bottom layers which includes grated coconut, jasmine rice, and salt. Blend this ingredient together in very fine powder. Now add this mixture in the mixture of rice flour. Use your hands for mixing until all lumps has been removed.
Recipe for Khanom Krok topping:
Mix all the mentioned ingredients for topping together. If you are using green onion inTwotopping, then make sure that they are chopped well.
Direction for Khanom Krok:
Heat the Khanom Krok pan and add the mixture of Khanom Krok in each hole. Don’t fill the holes with the mixture, leave some space for topping. Ideally filling the holes up to 2/3 would give you best results.
Once the mixture is cooked for up to 2 minutes, add the mixture of topping in each hole. Cover the Khanom Krok pan and cook until the color of cups turns into light brown which may take up to 7-10 minutes.
Once the cups are cooked well, remove each of them from the pan and serve warm.
3. Thai Fried Bananas
Thai fried bananas is one of my favorite Thai desserts to cook and eat because it has been cooked very quickly while required a very limited number of ingredients. In Thailand, the fried bananas have been served warm, but you can bring more taste by serving it along with ice cream of your choice. It does not take more than 15 minutes to cook Thai fried bananas. The traditional name of Thai friend bananas in Thailand is Kluay Khaek, and it has been served with coconut ice cream in restaurants.
- Three-quarters of rice flour
- One-quarter of tapioca flour
- Three tablespoons of sugar
- Salt as per taste
- Half cup of coconut (shredded)
- One and a half cup of water
- Nine bananas
- Oil for deep frying
How to cook Thai fried bananas
In a bowl mix all the primary ingredients except bananas which include sugar, tapioca, rice flour, coconut, and salt. Now add water little at a time to make a mixture. The consistency of this batter should be thick.
Now cut the peeled banana into three or five pieces. In a frying pan or deep fryer, heat the oil.
Now coat each piece of bananas in the batter which we have made in very first step and fry until they turned into brown. Make sure to drain the extra oil with the help of paper towels.
You can serve the Thai fried bananas warm as alone or with the ice cream of your choice.
4. Tong Yord
If you are looking for a quick Thai dessert to cook and eat then, Tong Yord is what you need to make because it has been cooked within 10 minutes where you have only required having three ingredients to prepare Tong Yord which includes eggs, sugar, and rice flour. It has to be one of the most popular Thai desserts you can ever make.
- 20 eggs yolk
- Five cups of water
- Five cups of sugar
- One cup of rice flour
In a frying pan, melt sugar into water. Use half water and half sugar for this syrup. Make sure to melt the mixture at medium heat otherwise the sugar will be burn. Once the sugar has been mixed, and water has been boiled, leave the mixture on the shelf for cool down.
Now separate the egg white from the egg yolk. We need only egg yolk for Tong yolk. Beat the egg yolk until a smooth froth has formed.
Mix ¾ cup of rice flour with 1 cup of egg yolks in a separate bowl.
Now make sugar syrup once again as we have made in the first step. You need to use 2.5 cups of water and 2.5 cups of sugar for this syrup.
With the help of a spoon, add the mixture of rice and egg yolk into the boiling syrup. The shape of the mixture should be in small sized.
When the mixture is cooked, soak them in the cool sugar syrup which we have made earlier.
5. Thai ice cream sandwiches
You have probably eaten different types of ice cream sandwiches in your life. But Thai ice cream sandwiches different because coconut milk has been used to make the ice cream along with fresh ginger and grilled pineapple. That’s why Thai ice cream sandwich is considering one of the most Thai Desserts.
- Two eggs
- Half cup of brown or white sugar
- Half tablespoon of ground ginger
- 1/2 tablespoon of lime juice
- 2 cans or cup of coconut milk
- Half pineapple (optional)
- Buns or soft cookies as per required
In a pot or bowl, whisk the eggs along with lime juice, sugar, and ginger. Once these ingredients has been mixed well, stir this in the coconut milk and combined well
Now Cook this mixture on medium heat until it’s turned into a thick mixture. It should be thick enough to coat the soon. Once it’s ready, leave it to cool down.
Once the mixture is ready, use an ice cream maker to make ice cream. If you do not have ice cream maker, then you can freeze the mixture in a freezer. You need to layer the ice cream with pineapple and freeze overnight or at least for 6 hours.
Now scoop the ice cream between the buns or cookies and serve.
Total cooking time is only 15 minutes, but you have to wait for up to 3 hours until the ice cream freeze solid.
